Valley Honey is unheated and unfiltered, thereby keeping all
of the natural goodness in. As the season progresses, the honey
will appear darker and the flavor will be distinctly stronger than
that which was produced early on. It is believed by some that
consuming honey that has been produced within 50 miles of your
home will greatly improve allergies to those plants that are in
bloom. Our honeybees will begin producing honey as the Apple trees
are in blossom, progressing through the season to Locust, Sumac,
Honeysuckle, Basswood, Clover, and, finally, Goldenrod. Honey is
an excellent natural sweetener in Tea, Barbecue Sauce, Baked Goods
and more.

In many recipes, honey can be substituted for all of the called
for sugar.
For sweetening, ¾ cup honey equals one cup of sugar.
12oz. of honey equals a standard measuring cup.
Before adding honey to a measuring cup, spray a non-stick spray
within the cup for easy honey removal.
Reduce the amount of liquid in a baked goods recipe by ¼ cup for
each cup of honey used.
Reduce oven temperatures 25 degrees F. to prevent over browning
of honey baked goods.
